Marzena Zając (PhD) is affiliated with Department of Animal Product Technology, Faculty of Food Technology, University of Agriculture in Kraków, Poland. She gained the PhD degree in Food Technology at the same university in 2007. After working in the meat industry, she started her scientific career in 2012 at the University of Agriculture in Kraków and has been working there as a university professor, teacher and researcher. Dr Zając is experienced in innovative application projects and cooperation with many companies. She is specialising in meat analysis, processing and food additives. Her research interests include functional food formulation, alternative meat curing and alternative food packaging.
