Ilga Gedrovica has studied food science and currently works at the University of Life Sciences and Technologies as an assistant professor and teaches students several study subjects such "Novel Food"
(including edible insects) and "Food Law".
As a senior researcher, she works in science and cooperates with entrepreneurs of the food industry, as a result, she created several food products, which can be bought in every supermarket in Latvia, as well as outside Latvia.
As a postdoctoral, she conducted research on alternative protein sources from edible insects from 2017 to 2020. She is the first scientist in Latvia and in the Baltics who study insects? usage in food.
